Gourmet Recipes

APF works closely with the Pacific Institute of Culinary Arts on Granville Island, Vancouver, British Columbia.  Every week APF provides two large boxes of mushrooms (and sometimes other seasonal specialties) to PICA. Then, under the supervision of Chef Darren Clay, students create original mushroom recipes. In this way students are encouraged to experiment as well as gain experience handling top-quality organic shitake, oyster and other mushrooms that are no longer the exclusive property of Asian cuisine. Currently, top level restaurants use them to tantalize Western palates. Even every-day home cooks are finding button mushrooms and other supermarket varieties flavourless in comparison.

Recipes are prepared by Pacific Institute of Culinary Arts (PICA) for Asia Pacific Farm Enterprises Inc. (APF) to use and distribute to APF’s wholesalers and distributors. Recipes remain the properties of both APF and PICA.
